"How to avoid sending a notification to my clients when I edit their booking?"

If you prefer not notifying a client when you edit their booking, make sure to select the option "Do not send a message to the client" in the appointment/reservation window in the Calendar tab. See the example below:

If you edit an appointment's date/time by dragging and dropping it to a new slot, a window will appear prompting you to select this option:
